Enjoying a beautiful day at the farm!
We have chicken available!! All of our chicken is pasture raised and non-gmo. We sell whole chickens, an 8pc cut up chicken or packages of thighs, breasts, legs or wings. We also have chicken liver, hearts and broth bones available.
Andrew at the Tower Grove Farmers Market today. Very nice market- breezy, not too hot, no rain. Everyone is wearing masks so everyone can feel safer in the outdoor market with plenty of distancing and civility. We are behind in getting resupplied for beef and pork: beef coming next week and pork cuts the following. In the meantime: great chicken and veggies.
The question was raised a few times at the Farmers Market: why is the pork shoulder roast called a Pork Butt? Apparently, it stems from the habit in New England to store this relatively inexpensive cut in a barrel for shipping and for later use. The name of the barrel used was a "butt", see the picture here. It was then referred to as the Boston Butt. It has zero to do with our other, more common, use of the term "butt". Pork shoulder roast, pork butt, blade roast, and others all refer to this portion of a hog that is a favorite for roasting or for pulled pork creation.
