Happy Labor Day from all of us at Phoenix Textile Corporation. Labor Day in St. Louis means pork steaks on the grill. Here’s a tip from our resident chef and Vice-President of National Accounts Scott Rodgers. Traditionally we St. Louisan’s think of a pork steaks as being cooked directly over charcoal and then soaked in sauce, often quite literally bathing in it. There is nothing wrong with this time-honored tradition however, if you’d like to take your palate for a ride down... a more sophisticated avenue you might try brining, dry rubbing, and reverse searing next time you are communing with the coals. Here’s one variation Soak those beautiful pork steaks in brine for 4 6 hours or as much as 12 hours if you like the convenience of brining overnight. See the brine ingredients below. Remove the brined pork steaks, dry them off with paper towels, and then sprinkle on your favorite pork rub. See my preferred rub below. Using indirect heat, smoke those brine-transformed pork steaks low and slow until they reach an internal temperature of 155 degrees. At about 200 215 degrees it should take 1 - 2 hours. To finish them off crank up that charcoal fire to high and sear each side for 2 -3 minutes. Then brush on a thin layer of hot honey and sear again for 1 minute on each side. The resulting meat will be tender and juicy, not unlike really good rib meat, complete with a nice pinkish-red smoke ring. Enjoy with a glass, or two, of Australian Shiraz. Giddy up! Brine: One-gallon of water, one cup kosher salt, cup dark brown sugar, 2 tablespoons candied ginger. Rub: Weber’s Honey Garlic Rub. Hot Honey: Mike’s Hot Honey with a dusting of paprika. See more
