Honey harvest time! Woot woot!

Our first honey harvest is around the corner! The first harvest of the year is lighter honey and is made from mostly tree and clover nectar. The flavor of honey is dictated by the location of the hives (flowers near it that are blooming), weather each year and the time of harvest. Why weather? Examples: A drought can cause certain flowers to succeed or fail affecting the type of nectar that is collected. Or a frost can kill off flowers before the nectar is collected. The type of nectar collected affects the flavor and color of the honey. It's ready!! Honeycomb is a seasonal product for us, and very special! Each piece is hand picked and sliced with care. Only the prettiest honeycomb is packaged to sell. You can eat all of it - wax and all! Some people eat the wax, some people like to take a big sticky bite and chew on it till the wax makes a ball and spit it out. We love it by itself, served with soft white cheeses (like brie) and crackers, on a charcuterie board, on a hot buttered biscuit or with fruit (espe...cially PEACHES)!! Your honeycomb comes in a hard plastic box to protect it - and is totally reusable! The size of the slice is approx 5.7oz by weight.
