New announcement - new spice I made that I love on pulled pork! If you have had pulled pork at my house at the Amelia Festival this is the mixture I use in a ...pressure cooker with apple juice. It is also great as a dry rub on the grill/smoker! I have also had this out with testers. Hopefully they will give a review of their thoughts in the comments

Do you love zucchini bread but hate the hassle of grating zucchini?? Do you wish you could make it year around but didn’t save any from summer? Well...we have a solution! We had about 90 pounds of organically grown zucchinis so decided to shred and vacuum seal in four (4) cup bags that fit perfectly in the freezer. It is just perfect for a big batch of bread or bread and casserole. Please let us know if you would like some for your freezer, I’m sure it will go fast! $6 for each bag.

INGREDIENTS 1 tablespoon Cajun or Creole seasoning 24 (1 pound) cleaned and peeled extra jumbo shrimp... 6 ounces fully cooked Turkey/Chicken Andouille sausage or kielbasa*, sliced 1 medium zucchini, 8 ounces, sliced into 1/4-inch thick half moons 1 medium yellow squash, 8 ounces, sliced into 1/4-inch thick half moons 1 large red bell pepper, seeded and cut into thin 1-inch pieces 1/4 teaspoon kosher salt 2 tablespoons olive oil INSTRUCTIONS In a large bowl, combine the Cajun seasoning and shrimp, toss to coat. Add the sausage, zucchini, squash, bell peppers, and salt and toss with the oil. Preheat the air fryer 400F. In 2 batches (for smaller baskets), transfer the shrimp and vegetables to the air fryer basket and cook 8 minutes, shaking the basket 2 to 3 times. Set aside, repeat with remaining shrimp and veggies. Once both batches are cooked, return the first batch to the air fryer and cook 1 minute

Stuffed Peppers Bell peppers 2lbs sausage 1 can black beans (drained well)... 1 cup instant rice 1 can tomato sauce- 16 Oz 2 Tbls ‘All Things’ sloppy joe mix 1 cup shredded cheese (your choice) 2 beaten eggs Extra cheese for topping Choose enough peppers to fill you pan (we used a 9x13 pan). Cut top out of pepper and remove seeds and spines (careful, don’t poke any holes in the peppers) Spray pan with cooking spray (olive oil) Mix sausage (we used hot homemade), beans, rice, 1/2 of the tomato sauce, sloppy joe mix, cheese and eggs together (just use your hand to mix. I find it is easier to fill the peppers with your hand anyway) Pour remaining tomato sauce and about 1/2 cup of water into bottom of baking dish. Fill peppers with meat mixture to close to top (I poke a hole in the middle of the meat to help cook evenly). Place peppers in baking dish. Top each pepper/meat with extra shredded cheese. Need some inspiration? April made squash tots last night. Here’s the recipe and don’t forget to stop by for 2 yellow squash to try it yourself! 1. Peel and scoop seeds out of 2 medium sized squash. Grate squash or put through a food processor. Ring out grated squash. 2. Mix squash in a bowl with 1 egg, 1 cup bread crumbs, 1/2 tsp salt, 1/4 tsp garlic powder, 1/4 finely chopped onion, 4oz grated cheddar cheese, black pepper to taste. ... 3. Shape tots and place on baking sheet with parchment paper. Bake at 400 degrees for 25 minutes or until slightly brown on top. 4. Wait 5 minutes before enjoying your squash tots! Make the recipe your own by using zucchini instead of squash or adding peppers to step 1!
