Canning is one of my most favorite things to do! It takes me back to my childhood where my mom raised and dressed out chickens and tended to two large vegetable gardens. We raised pigs, bought beef from friends and knew what they fed their cattle. Processed foods didn’t exist and everything was homemade. My Mom canned in a hot kitchen without air-conditioning, but never complained. I regret not spending more time helping Mom can, especially grape jelly and juice. I’ve had to learn how to do this on my own since Mom has passed. I am in my element when I am in the kitchen canning wine grape jelly from our vineyard grapes and apple butter and applesauce from my fruit orchard. I hope my 2 daughters will develop an interest in learning how to can with me. Passing on a family tradition.it doesn’t get any better that that.
