Watching the snow fall reminds us that food is often the first thing cut from budgets when times get tough. Deciding to pay a bill (for heat) or buy groceries is an unfortunate choice many people have to make. Circumstance are worse for folks who live in areas of Illinois and Missouri with limited access to food and other resources. Our Foodbank is proud to partner with agencies like Least Of The Brethren Ministry: Jesus' Hands feed the Hungry to provide food and facilitate access to resources that everyone needs, no matter the circumstance. This Tuna Salad* recipe is a delicious combination of creamy and crunchy! You can serve it on a sandwich, wrap it in lettuce, or eat with crackers as a healthy snack. Can opener Medium bowl Cutting board Knife for chopping veggies Measuring cups/spoons Ingredients: 2 5-ounce cans of tuna 1/4 cup mayonnaise 1 stalk of celery, diced 2 tablespoons red onion, diced 1-2 tablespoons chopped parsley, chives and/or other herbs 1/2 tablespoons Dijon mustard salt and pepper, to taste Directions: 1. Drain the liquid from the tuna cans. 2. Add the tuna, mayonnaise, diced celery, diced red onion, herbs, Dijon mustard, salt and pepper to a mixing bowl. 3. Stir all of the ingredients together until well combined. 4. Enjoy the tuna salad plain out of a bowl, wrapped up in lettuce, or in a sandwich. *Tips: Tuna salad tastes the best when it’s eaten fresh. This recipe can be stored in the fridge for 3 days. Because this has fish and mayonnaise in it, don’t leave it sitting at room temperature on the countertop for longer than a few minutes.

This #WarehouseWednesday, we're giving a shout out to our awesome warehouse and volunteer center team, along with our drivers. Since mid-March, we've seen a 46% increase in the amount of food provided compared to the same time last year. That's enough food to provide more than 40 million meals! Our team works diligently to receive all the food coming in, sort and repackage it (if necessary), and get it out into the community through our network of more than 600 partner agencies in the 26 counties we serve. We're proud to be the only Feeding America food bank serving this region and we won't stop until we achieve our vision of a stronger, healthier bi-state region where no one goes to bed hungry. #ScoutingForFood is our largest food drive every year. The in-person collection was cancelled to keep everyone safe, but Greater St. Louis Area Council, Boy Scouts of America has a couple easy ways for you to help us feed local kids, adults, and seniors. The need for food assistance is at the highest level we have seen in the 45-year history of our organization. Prior to Thanksgiving, we announced that Ameren Corporation was matching donations dollar-for-dollar, up to $100,000. You knocked that out of the park, and we are excited to announce that Ameren has added a second $100,000 match! If we can raise $200,000 this holiday season, Ameren will match that amount and we will be able to provide 1.6 million meals for people in eastern Missouri and southwestern Illinois. Here's some good news to end the week on - thanks to generous supporters like you, we ended up exceeding our goal on #GivingTuesday and maxing out our match from Farm Credit Illinois! As a result, hundreds of thousands of children, adults, and seniors in the bi-state region will have a meal to eat. For today’s #WarehouseWednesday, we’re highlighting the Commodity Supplemental Food Program (CSFP), an important federal program that helps provide monthly boxes to senior citizens full of foods that are loaded with vitamins and nutrients that may be lacking in seniors diets. Each month, our volunteers (today’s group included our new Marketing Manager, Jessica) create more than 13,000 of these boxes to be distributed in eastern Missouri and southwestern Illinois. The pushback racking in our warehouse helps us rotate and safely store these boxes of food prior to their distribution.
