Happy Saturday everyone! Drumroll please We have a new Slow Food Presidium! Thanks to the work of farmers and institutions, the recognition of this Icela...ndic, heritage poultry breed supports the protection and promotion of the island’s biodiversity. They are very colorful, medium-sized chickens, rather long-legged and with a light build. They are bred for their eggs, since the chickens are typical free-range birds, coping with Iceland's harsh environment all year around and laying eggs even in the dark, cold season, says Jóhanna G. Harðardóttir, the Presidium producers’ coordinator. Slow Food's recognition of the Presidium is an encouraging sign that bodes well for the future: By establishing the Presidium, the marketing of labelled products, mainly eggs, will improve, as consumers will pay attention to the narrative labels and appreciate the efforts of the small-scale, local producers," says Dr. Ólafur R. Dýrmundsson. "This means the consumers are likely to help us to maintain and preserve this breed in the future and also help us to fight the genetic erosion now taking place in native poultry breeds worldwide. As a small farm, we have adapted many times over the season such as temporarily providing preorders for home delivery and curbside pickup, modifying our farmers market setup, and adding more shares to our CSA. We have tremendous appreciation for all of you that found ways to adapt as well while still supporting your local farmers, producers, and businesses. At a time when the industrial food system has stumbled, faltered, and sometimes outright failed, this year has shown us that the local food system is alive, diverse, and resilient. Thank you all for your continued support and considerations.

What is Community Supported Agriculture (CSA)? At Hart|Beet Farm we believe our community should have access to locally grown, fresh produce. During the growing... season our farm offers a limited number of shares to the community. Customers can purchase their share during the winter, or up to the beginning of the season, providing our farm with much needed operating expenses (which are high in the spring). In return, members will receive a weekly share of fresh vegetables and herbs from our farm during the growing season. From Russia: a dish whose origins are still debated. Beef Stroganoff is one of the great classics of 19th century Russian cuisine, and in the 20th it became pop...ular the world over, with significant variations on the original recipe. The dish is composed of strips of sautéed beef served in smetana, a sour cream sauce produced using lactic-fermented cream and widely used across Eastern Europe. It's a versatile sauce, with a delicate and lightly acidic flavor that can accompany both main courses and desserts, cold or hot. Regarding the name of the dish, one theory holds that it was invented by the French chef of Count Pavel Stroganoff, who added the sour cream to the beef in a fricassee, to please the Count's palate. This initiative, endorsed by FPT Industrial, was conceived by Slow Food with the aim of promoting collective projects with a significant sustainable and social impact, by helping them develop their potential to transform the food system. These fishermen represent a collective system of food production that perfectly matches the founding values of Slow Food.
