Lamb loin chops for the win. An easy method for cooking steaks: bring meat to room temp for even cooking... salt and pepper on both sides heat olive oil on med-high in cast iron skillet add lamb to pan, 3.5 minutes per side (don’t move or check the side when pan searing... this will disrupt the crispy layer that you want to form) turn temp to low add 2 tablespoons of butter and a tablespoon of diced garlic (I bought mine in a jar... no prep!) spoon butter mixture over chops for 3-5 minutes Option butter add ins: fresh garlic, rosemary, thyme

A long day, but a very fun 1pm break! @schyler_angell was a homecoming queen candidate and her bestie @stidham.lily took the crown! While the crowning was Covid caution to the max (no students allowed ) I had a great time cheering all the girls on!

It’s time to finish up my seasonal beef product plans. Do any of my friends and customers have holiday beef suggestions? Last year I tried pre-seasoned prime rib and original flavored summer sausage (anyone interested in those items?)... what are yours favorite Christmas beef options?

Turns out grad school is a great place for a self help junkie. I’ve always loved podcasts, audiobooks and TED Talks about leadership and living my best life. This semester I have 3 classes... the black book is for a course about teaching adult learners (hey, that’s me!). My second online class is about Leadership Theory and Application. My last and only in person class is about Leading Organizational and Community Change. It’s been really fun to be back at school with a few years worth of work/leadership/life experience. Also, I haven’t read this much since high school!

I snapped this picture while walking to my office at Mizzou this morning. It’s been interesting being back on campus as a 27 year old. I appreciate the pretty buildings and the landscaping so much more than the first time around. I’ve mowed a few more yards and killed a few more plants in the last few years I guess... Yesterday I decided to have a skip day which quickly turned into a sheep work day. We revaccinated the babies, trimmed hooves and wormed the lambs. All things that had been weighing on our to do list but we just couldn’t seem to coordinate a day to get them done! Justin and I are both sore today!!! But a day away from campus and the computer was a perfect mid-week break. Now back to reading and writing... cheers to appreciating where we are at this week!
