Feels like summer, even though it’s not yet official. To help keep you cool and healthy today, might I suggest a blueberry cashew cheesecake! I made two sizes, with an oat flour graham cracker crust. The other thing that makes it seem like summer are the buggies! Last night the fireflies were out showing off their gorgeous glow. Unfortunately, the mosquitos too have arrived. It grows in high altitudes and is cruciferous with a history of medicinal usage in Peru. It has an earthy nutty taste and is highly nutritious. It is thought to increase libido, fertility, relieve menopause symptoms and improve mood. Nonetheless, we just love how this cookie tastes.
