This whole year has been a whirlwind. There has been so many things that have gone wrong, but there are also a lot of things that have gone right. New life has been brought into this world, connections between two people, marriage, finding out that new life will be created in 2021, puppies were adopted, family was formed, relationships with God were created. There is always a silver lining in a messed up situation. We may not be able to have faith in this world but we will al...ways be able to have faith in God. We will always be able to trust him in every situation. We should always go to him before we do anything. Daniel in the Bible would always get with the Lord before making a decision. Why can't we be like that too? That is going to be my New Years resolution, to always want to ask God for help instead of trying to figure out everything. We can not go into this new year with fear of what has happened in 2020. Faith not fear, right? All we can do is trust in the Lord, that He has his hand on everything, that He will provide for us, and He will protect us. I LOVE no bake cookies, and they are so easy to make! Start with: - cup unsalted butter or coconut oil... - 2 cups granulated sugar or honey - cup whole or 2% milk - 4 tablespoons unsweetened cocoa powder - Pinch of salt - cup peanut butter or almond butter - 2 teaspoons vanilla extract - 3 cups quick-cooking oats Instructions: - Add the butter, sugar, milk, cocoa powder, and salt to a 4-quart saucepan. - Bring to a rapid boil and let boil for 1 minute. - Remove from heat. - Stir in the peanut butter and vanilla extract until smooth, then stir in the oats. - Using a medium cookie scoop (or 2 tablespoonfuls), drop onto parchment-lined baking sheets. - Let cool until set, about 30 minutes. - Cookies can be stored in an airtight container at room temperature (or in the refrigerator) for up to 2 weeks. I love peppermint bark during Christmas time! It's a comfort snack! Here is a recipe for 5 ingredient peppermint bark: Start with: - 8 ounces high-quality semisweet chocolate, broken into pieces... - 2 teaspoons canola oil, divided - teaspoon peppermint extract, divided - 8 ounces high-quality white chocolate, broken into pieces - 25 peppermint candies, crushed Directions: - Lightly grease a 9x9 inch pan and line with waxed paper, smoothing out wrinkles; set aside. - Place the semisweet chocolate and 1 teaspoon of the canola oil in the top of a double boiler over just barely simmering water, stirring frequently and scraping down the sides with a rubber spatula to avoid scorching. When the chocolate is melted, stir in 1/4 teaspoon of the peppermint extract. Pour the melted chocolate into the prepared pan, and spread evenly over the bottom of the pan. Sprinkle half of the crushed peppermints over the chocolate layer. Refrigerate until completely hardened, about 1 hour. - Place the white chocolate and the remaining 1 teaspoon canola oil in the top of a double boiler over just barely simmering water, stirring frequently and scraping down the sides with a rubber spatula to avoid scorching. When the chocolate is melted, stir in the remaining 1/4 teaspoon peppermint extract. Pour the white chocolate directly over the semisweet chocolate layer; spread evenly. Sprinkle the remaining crushed candy over the top and gently press in. Refrigerate until completely hardened. Remove from pan; break into small pieces to serve.
