Cold days always make me crave warm soups... Vegetarian Chili 10 Servings, Each Counts as: 1 Life Protein, 3 Life Carbs, 2 Life Fats... Ingredients: 1 large onion, finely chopped 1 green pepper, seeded and finely chopped 6 cups canned low-sodium stewed tomatoes 2 cups canned pinto beans, drained and rinsed 1/8 tsp ground cloves Dash allspice 2 tbsp chili powder 1 tbsp cumin Directions: 1. Sauté’ onion and green pepper in a Dutch oven coated with nonfat cooking spray. 2. Add the remaining ingredients and simmer until flavors are blended about 20-30 minutes 3. Yeah it’s Friday! I know the hard work that goes into making good food choices all week. But don’t let the weekend set back your progress. For example, you can add a few things to a side item at dinner to make you feel like you ordered out, however maybe it’s a little healthier and keeps you on plan. In fact, this asparagus recipe, my extremely picky 9 yr old, will even eat up. Garlic Asparagus (4 servings) Each count as: 1 Life Carb & 1 Life Fat... Ingredients: 2 tsp. Minced garlic 3 tbsp. Dijon mustard 1 tsp. Olive oil 1 tsp. Lemon juice 1 lb. asparagus, trimmed Directions: 1. Preheat the oven to 400 degrees. 2. Combine garlic, Dijon, oil, & lemon juice. Line asparagus on a baking sheet and drizzle with sauce. 3.
