One of our community members, Elizabeth "Libby" Dodd passed away on March 22, 2021 after a long struggle with addiction. Her family needs assistance with the cost of burial. She finished high school in six months, and enrolled in college... at the age of 16. She was brilliant and beautiful and kind. Unfortunately, through work, she fell in with a bad crowd. She developed addictions that used her extraordinary intellect against her. And eventually, she succumbed to them. She was found in a motel room. Everything she owned had been stolen by other users. She was 20 years old. Her brother-in-law, Bob Anderson of Petrichor loved Libby as a sister. We have watched her parents suffer through their grief while we struggled to pay the exorbitant funerary costs, and while those wounds are still raw, we find ourselves thrust into the same challenges. The proceeds from this GoFundMe will go to offsetting the cost of burying their second child in two years. Our target in $5000. Even if you can only offer $1, please do so. HEATHER AND THE HIGHLANDS RECIPE OF THE WEEK. SHORTBREAD 1 CUP FLOUR... 4 TBSP SUGAR PINCH OF SALT 1 STICK OF BUTTER 1 TSP CREAM OF WHEAT 1 EGG YOLK, BEATEN 2 TBSP MILK VANILLA SUGAR Sift together the sugar, flour, and salt. Cut butter into cubes and rub in with your fingers until the mixture is crumbly. Make a well in the center and add the egg yolk and milk in the hole. Use hands to work the mixture into a smooth dough. Transfer dough into an 8-inch cake pan and spread dough evenly to the edges of the pan. Crimp the edges with a fork and score into slices and then prick all over with a fork. Chill in the refrigerator for 30 min. Heat the oven to 400 degrees and bake the shortbread. Turn down the heat to 300 degrees and bake for an additional 30 minutes. The shortbread should be a pale golden brown. Remove from the oven and cut it into slices while it is still warm. Do not attempt to remove it from the pan until it is cool. Sprinkle with vanilla sugar before serving.

HEATHER AND THE HIGHLANDS RECIPE OF THE WEEK PAN HAGGERTY 3 Tbsp bacon fat, butter or lard... 4 potatoes, peeled and sliced thinly 2 onions, chopped fine 1 cup grated Lancashire, cheddar or other sharp cheese Salt and pepper to taste 3 slices fried bacon, crumbled Melt the fat in a heavy, oven-proof pan over low heat. Create layers of potatoes, onions, and cheese ending with a layer of potatoes on top. Season each layer with salt and pepper if desired. Fry gently for about 30 min. Sprinkle with crumbled bacon and a little more cheese on top. Transfer the pan to the broiler. Cook for about 5 minutes, or until the top is well browned and cheese is bubbly. Serve straight from the frying pan.

Truman Memorial Veterans’ Hospital will hold a series of COVID-19 vaccination clinics for Veterans who are eligible for VA health care. COVID vaccinations will be administered by appointment at several Community-Based Outpatient Clinics (CBOC) on the dates listed below.... Who: Enrolled Veterans of any age who are eligible for VA health care may receive a COVID-19 vaccination. RICE PUDDING 1 cup uncooked rice 2 cups whole milk cup sugar... tsp vanilla tsp salt Dash of cinnamon or nutmeg Brown sugar and cream Soak rice in water overnight. Drain the rice and place it in a pie dish. Pre-heat oven to 350 degrees. Combine milk and sugar in a saucepan; heat until almost boiling, stirring until sugar has dissolved. Remove from heat, add vanilla and salt; pour over rice. Sprinkle with cinnamon or nutmeg. Bake for about 1 hours or until a light crust forms on the surface. Serve warm with brown sugar and cream. HEATHER & THE HIGHLANDS RECIPE OF THE WEEK As we get closer to St. Patty’s Day I think an Irish mixed drink would be appropriate so today we’ll learn to make an Irish Cactus cocktail. THE IRISH CACTUS... 2 ounces Irish cream liqueur 1 ounce tequila In an old-fashioned glass filled with ice, pour the Irish cream and tequila. Stir well. Serves 1. If you need help procuring the ingredients for this recipe the good folks at Fayette’s newest liquor store Ma’s Discount Hootch.

HEATHER & THE HIGHLANDS RECIPE OF THE WEEK SYLLABUB (Dessert Drink) Juice and grated zest of 3 lemons... cup sherry 5 TBSP sugar 3 cups heavy cream tsp nutmeg Twists of fresh lemon peel Stir together lemon juice, grated lemon peel, sherry, and sugar in a ceramic (don’t do metal) bowl. Cover loosely with a clean cloth and chill in a cool place, covered, for about an hour. Strain the mixture into another bowl and add the cream. Beat with a wire whisk until the cream becomes thick and forms ribbons. Pour the Syllabub into two dessert glasses and refrigerate for at least 2 hours. Before serving, top with a little nutmeg and garnish with a little of the lemon peel.

HEATHER & THE HIGHLANDS RECIPE OF THE WEEK APPLE POTATO CAKE cup butter... 6-8 oz flour tsp salt tsp baking powder 3 cups freshly mashed potatoes, made with milk 2 large cooking apples 1 tsp cinnamon Sugar to taste tsp ground cloves 2 tbsp butter Cut butter into the flour until crumbly. Add salt and baking powder; mix well. Mix in mashed potatoes. Knead for a few minutes. Divide the dough into 2 balls. Roll each ball into a circle inch thick. Peel and core apples and slice thinly. Layer apples on one of the dough circles. Sprinkle with cinnamon, cloves, and sugar; dot with butter. Cover with the other dough circle and pinch edges to seal. On a greased griddle or frying pan, cook slowly over low heat for 15-20 minutes, turning once. Serve with cream, custard, or lemon curd and hot tea.
