It's cold outside! But it's warm and smellin good here at K-DOG KITCHENS! Red Beans and Rice! Enough Said! For me it's a 24 hour process...... Soak the beans in water and their seasonings... Add more water and bring them to a hard boil... Then reduce the heat and let them simmer on medium low for about 3 hours... Then smash some of the beans, do the final tasting and add anything else needed... Then drop the heat to low and let it all just bathe together for 3 or 4 more hours... I think I've said it before... Patience.... Flavor takes time! And NO SHORTCUTS! See more

What's for Dinner Tonight? Well it's been way too long since I've wrapped my hands around a big juicy Burger! Here's a little Chef's tip you may want to try... I usually don't add oil to the skillet before cooking a Burger however, every now and then I do! There's just one rule...... It has to be... BACON GREASE! That's right! Add a heaping Tablespoon of good ole Pork Fat at it's finest! And make sure when you put your Burger in the skillet you get the grease all over it! And the same on the other side when you flip it! You can thank me later! And for God's Sake people... NEVER press down on your Burger with a spatula while cooking! If you do then stop wasting time and money buying Ground Beef and eat a piece of cardboard... Same thing! See more

Happy Spring to Everyone! Yeah I know, Spring doesn't officially start until tomorrow but this warmer weather we've been having has me ready! So, in honor of Spring and the 2019 BBQ season, I'll be making up a Big Batch of my Carolina Mustard BBQ Sauce! Made a small Batch 2 days ago and it's already gone!
It's Sunday Morning which only means one thing at the Collier house! Avocado Toast! Gonna switch it up today... Got some fresh baked bread and farm fresh eggs.... Gonna poach the eggs instead of frying them...
Okay, Done a little experimenting tonight. What we have here is a Half Pound 80/20 Beef/Pork mixture. I added Gorgonzola Crumbles into the Patty before cooking. I teamed that up with a Cilantro/Lime Aioli with a little Garlic, Dash of Hot Sauce and more Gorgonzola Crumbles.... Chopped Onions and Tomatoes. And I must say... It's Delicious! See more
Ahhh... A lazy Sunday... Just finished a batch of Guacamole to use on the Avocado Toast my daughter has requested for lunch before she goes to work... She is also my official Guacamole taste tester.... She approves!
