This is, without a doubt, my favorite healthy meal to make. It’s super easy, super fast, almost impossible to screw up and the combination possibilities are endless! Say hello to my friend, the Zucchini Boat. It’s SO easy and it’s a great way to use up those sneaky zucchini’s that grow to incredible sizes! The best part is that you can fill it up with whatever toppings you like! My favorite is cooked chicken mixed with Parmesan cheese and a little cream cheese and some shred...ded cheddar cheese on top. Set your oven to 400 degrees. Cut a zucchini in 1/2 lengthwise, scoop out the seeds and lay flat on a cookie sheet. Spread some butter on the zucchini to keep it from drying out. Bake in the oven for 5-10 minutes (until it’s tender). Remove from oven and add filling/toppings. Put back into the oven just until the cheese is melted. Remove from oven and enjoy! Other ideas for fillings are: Italian sausage (just check the sugar content before buying - sometimes they have a lot), ground hamburger, ground turkey. Prego also has a no sugar added pasta sauce that is very good.
