One of our latest flavors is inspired by a trip to my beloved Italy! "As a first time visitor to Italy, specifically Venice, I had spent the majority of my time sampling local savory dishes. It was a whim that I decided to stop at the Paticceria Rosa Salva for a spot of caffeine to start my day of exploring. The woman behind the counter must have understood who I was and what I needed in my life because without asking she added a Budino to my order. She smiled and said puddi...ng. I shrugged not understanding what was so special about a pudding. Pudding didn’t explain what it was. My spoon went through the delicate tuft of lightly sweetened whipped cream, the dark layer of burnt sugar caramel and the, only what I can express as the most deep, buttery, salted butterscotch flavor I had ever experienced. Simple and yet so complex. I smiled at the woman behind the counter. She knew, pure euphoria."

Sweet citrus pop of the pineapple and mandarin orange, the fluffy puffs of marshmallow, sweet coconut, tart cherries and the sourness of the yogurt base recreate years of Thanksgiving meals and their sweet memories. Some people call it a salad, some a dessert. My Aunt considered it both, and it was everything. Every Thanksgiving, it was present at our family table. It was so colorful and reminded me of the traditional, beautiful colors of fall.
