We are softly open in our new home in the Crossroads! That means entrees, soups, and beverages are back on the menu. Salads, bowls, boxes, and bites will come back with a grand opening in March Online ordering is still available all week, with a new menu released every Sunday. Pickup and delivery hours will be limited for a moment as we get acclimated to our new location. All orders will currently be served cold (heat at home), but when the snow is gone we will offer patio seating! Ordering is available starting today, and delivery/pickup begins February 18th 20th. The Skillet Tamale is a reference to my daily dive into cookbooks in the late 70’s. The 70’s saw the introduction of organic foods, widespread vegetarianism, and movement of the flavors of the world from the American coasts into the heartland. A 70’s Skillet Tamale was like taking all of those elements and tossing them into a blender. Know The Story Behind Your Food When I first began cooking professionally in the 80’s the food trend was to add dairy fats to everything. Cream cheese and heavy cream were common in soups. At the time, my first taste thought delicious! But it soon became cloying and unappealing. To this day I dislike soups with heavy cream bases. Instead I prefer soups loaded with vegetables that are flavored with herbs and spices and finished with a drizzle of quality olive oil. This Dahl... is a perfect example - complex seasoning, nutrient rich lentils, a touch of acid to brighten the flavors and a finish of green chili olive oil for flavor and richness. With the coming of cooler weather we are adding more varieties of soup to the menu each week. Know The Story Behind Your Food I have been an environmentalist since I was in 7th grade. My eyes were opened by my science teacher. So at age 12, I did what I could to monitor water use (shorter showers, turning off faucets to prevent wasting water, picking up trash in parks) As a young adult my actions multiplied as my awareness increased. Shopping at farmers markets to reduce the carbon footprint, separating recycling then driving it to a recycling site, and never letting... my car sit and idle. Organic produce wasn’t readily available from local farmers until the early 90’s, but when it was I bought it. As time marched on more options became available. Curbside composting, hybrid cars, solar energy. If it was an option I choose it. This passion to create a cleaner healthier planet is a thread that runs deep through every business decision I make. It takes research and adds cost, but to me it is the only option. I am accustomed to others not caring about this the same way. Accustomed to the confusion about composting vs recycling. Explaining what can be recycled and what cannot. Accustomed to the confusion as to why I don’t want to create waste by printing out a menu. Every detail matters to me. I am proud that I have created a food business that composts and recycles everything but one small bag of trash a week. I am proud that we have a product that creates zero waste and has a minimal carbon footprint. But I am hope to do more. I envision operating out of a space that uses clean energy and makes deliveries with electric cars. But for now, canihaveabite offers organic dishes in compostable packaging that provide nutrition for you and help the earth. It’s not the first thing customers think about, but it is the first thing I think about. And as you can tell by the photo. Know The Story Behind Your Food Many of our dishes have a story behind their concept. David is an industrial designer and came up with the design for our front counter, compost area, and the entrances at our former Brookside and Waldo locations. David is a problem solver and without his creative skills canihaveabite would not have it’s sleek design. We miss having customers walk in and talking to them over the counter. But those days will return David has certain faves cor...n, chicken thighs and rosemary. When I thought of creating a gluten free chicken pot pie combing those faves made it easy. David’s Chicken Pot Pie is a twist on tradition- more vegetables, rosemary (and a few more herbs!) both light and dark meat, and a cornmeal crust. The Story Behind Our Food: We have been busy working on some new ideas and this focus has meant slacking on social media. So I am going OG and giving some stories behind our dishes. When I first began creating entrees the focus was addressing clients dietary needs. This meant the main ingredients were loads of vegetables, and no gluten or dairy. Tres Bon Farm Dinner is a perfect example of what became our trademark style. Layers of vegetables with lots of distinct but comp...limentary flavors. Over the years I think I have played with every way to create a dinner plate within the boundaries of a compostable package. It is more complicated than cooking and serving. And more than ever I hope 2021 finds us ...connecting with other sustainable businesses creating much needed change. 2018 - Having a business is like having a baby. It goes through different stages as it grows and right now my business is in it’s teen years. It has unexpected demands, causes much more stress than when it was a wee one, costs more money and can keep me up at night as I calculate how do I send this child to college or prepare for adulthood? And like any parent I have a vision for what I hope will happen.
