It’s really easy to cook and freeze pumpkin for your favorite recipes. I took a few pictures of how I did this today so everyone can see how simple it is. Cut open your pumpkin and remove all the seeds and pulp. Slice into manageable size pieces. Remove skin and cut into one inch cubes. I cut up two medium pumpkins and they filled my roaster about 2/3 full. Turn temp to about 300, cover and go do other things for a few hours. These cooked for about 3 hours, stirring half way through. Cook until soft. You can use a mixer, blender, or food processor to purée. I used my emersion blender and it was quick and easy. Let cool. With your favorite pumpkin recipes in mind, measure desired amount into freezer containers or freezer bags and freeze. Two medium pumpkins yielded 16 cups puréed. Message us if you have questions!
