Here is a good infographic from the University of Minnesota Extension breaking down what to expect when purchasing a lamb direct from a grower. The type of lamb we raise is a bit smaller than the one featured in this breakdown, yielding around 35 lbs of meat instead of 47 lbs. However, the ratio of the cuts included is still the same!
