Birke Simmentals Tasty Steakburger 1 1/2 lbs ground beef 6 brioche buns 1 stick + 2 tbsp unsalted butter... 1 sweet onion cut thin width wise 2 cloves garlic finally minced 2 tsp onion powder 1 tsp salt 1/2 tsp pepper Soy sauce American cheese Toppings Special Burger Sauce (1/4 cup mayo, 1/4 cup ketchup, 2 tbsp relish, 1 tsp white vinegar mix together) Butter Lettuce Ripe Tomatoes (preferably from the garden) 1. Melt the 2 tbsp butter in a small sauce pan on back burner, add sweet onion and combine. Once well coated turn heat to slow simmer and let onions carmalize 2. Melt stick of butter in stovetop in saucepan or skillet, add garlic and cook until fragrant, about a minute, add onion powder, salt and pepper and cook one minute more. Remove from heat, preferably to a bowl and let cool a bit. 3. Break ground beef apart in a medium bowl. Add half of cooled garlic butter mixture and 6 shakes of soy sauce and mix well by hand. Shape into 6 Patties. If using a skillet heat skillet in a medium heat and add a few shots of olive oil to skillet and cook to a safe temperature. Usually 4-6 minutes per side for us If using grill put burgers on a sheet pan lined with parchment paper and freeze for at least 30 minutes so they hold up well on grill. Cook to desired and safe temperature. *After flipping the first time add the cheese so it obtains a good melt 4. Use the remainder of butter and garlic mixture and baste the inside of the brioche buns and toast on a griddle, skillet or grill. This shouldn't take long so you could do it while the finished burgers are resting. 5. Stack your burgers and toppings including the carmalized onions, smear with burger sauce and enjoy.

Birke Simmentals Grilled Steak and Vegetable Salad 1/4 Cup Olive Oil 1/4 Cup Red Wine Vinegar 1/2 tsp garlic powder... 1/2 tsp dried thyme or 1 tsp fresh minced thyme 1 tsp Dijon mustard 3/4 tsp salt 1/2 tsp pepper 2 zucchini cut lengthwise into planks for grilling 2 bell peppers, halved, stemmed and seeded 2 tomatoes, cored and cut into wedges 4 Steaks of your choice good for grilling. Pictured is our very own Birke Simmentals Porterhouse Steaks This recipe is based off use of a gas grill 1. Whisk oil, vinegar, garlic, thyme, mustard, salt, and pepper together in a large bowl. Brush zucchini and bell peppers with vinaigrette; set aside remaining vinegarette. 2. Pay Steaks dry with paper towels. Season with salt and pepper to your preference. 3. For grill. Turn on all burners to high, cover, and heat grill until hot, about 15 min. Leave primary burner on high and turn off other burners. 4. Clean and oil cooking grate. Put Steaks, zucchini, and bell pepper on grill and cut until meat at least registers 125, that is normally medium rare. Usually between 4 to 8 minutes per side. 5. Cook the vegetables until they are well browned. Mine was 4 minutes per side. 6. Put vegetables and steak on carving board. Tent Steaks with foil and let rest for 5 minutes. 7. Cut vegetables into 1 in pieces. Add vegetables and tomatoes to reserved vinaigrette and toss gently until combined. 8. Arrange salad and steak on plate and enjoy. *Good starches to serve with this would be a toasted french baguette, baked, roasted or mashed potatoes (This recipe was inspired by an episode of America's Test Kitchen)
