RECOMMENDATION: Cumin Beef. Cumin (powder or seeds), is not a commonly used condiment in Chinese cuisine. Mostly used for cooking meats like beef or lamb. The Cumin Beef we cook requires a quick stir- fry to keep the sliced meat tender and juicy. Meanwhile, the cumin seeds, chili oil, and garlic create a heated yet sophisticated flavor.
RECOMMENDATION: Shredded Pork with Garlic Sauce. The name of the dish, Yu Xiang Rou Si (), can be directly translated to fish fragrant shredded pork. However, the sauce contains no fish or seafood, but is instead made of hot chili paste, garlic, ginger, scallions, etc. The traditional way to make the dish is by cooking it using lean meat and scallions, no vegetables will be added to it except black mushrooms. This is the traditional cooking style that we are going to apply for this dish at the Bamboo Terrace. The Shredded Pork with Garlic Sauce, is not very well known in Chinese restaurants overseas. This dish, however, is one of the most classic dishes of Szechwan cuisine in China. In fact, the origin of this dish can be traced back to the beginning of 20th century.

The large meatballs are meant to represent a lion head and the greens represent the mane! The juicy meatballs mixed with a salty broth, bok choy, and vermicelli. You may also thicken the broth with cornstarch and drizzle it over the meatballs.
